Two mad ideas are better than one, though, and after setting up the beloved \u003cem\u003e\u003cstrong\u003ePorterhouse Brewing Company\u003c\/strong\u003e\u003c\/em\u003e, it was time for an artisan distillery. At a time when 3 major brands ruled the Irish distilling world, \u003cem\u003e\u003cstrong\u003eThe Dingle Whiskey Distillery\u003c\/strong\u003e\u003c\/em\u003e was born in an old Fitzgerald sawmill in the Milltown district of Dingle in southwest Ireland. How did they do it? By choosing quality over quantity and the \u003cem\u003e\u003cstrong\u003e3 custom-made copper pot stills\u003c\/strong\u003e\u003c\/em\u003e with a special boil ball – not to be mistaken with a ball boil, widely popular in the 1700s – didn’t hurt either.\u003cbr\u003e\r\n\u003cbr\u003e\r\nThe first permanent Whiskey release in the Dingle family, \u003cem\u003e\u003cstrong\u003eDingle Single Malt 2021 Release\u003c\/strong\u003e\u003c\/em\u003e is a triple distilled beauty. This Dingle is a child of a loving marriage between 61% of 1st fill \u003cem\u003e\u003cstrong\u003ePedro Ximenez casks\u003c\/strong\u003e\u003c\/em\u003e and 39% of\u003cem\u003e\u003cstrong\u003e 1st fill Bourbon casks\u003c\/strong\u003e\u003c\/em\u003e, both aged 6-7 years. It’s not chill-filtered and naturally, you won’t find any added color – it simply doesn’t need it.
