Helen would disguise the mashing and fermenting as bread-making. Then, while the officers drank the tea she made for them, she would fly a red flag from the barn to warn their neighbours that revenue men were around.\u003cbr\u003e\r\n \u003cbr\u003e\r\nIn 1874 Helen handed the distillery to another strong woman, \u003cstrong\u003e\u003cem\u003eElizabeth\u003c\/em\u003e\u003c\/strong\u003e, the wife of her son. Elizabeth, known as \u003cstrong\u003e\u003cem\u003eThe Queen of the Whisky Trade\u003c\/em\u003e\u003c\/strong\u003e, rebuilt the distillery and doubled capacity. She made Cardhu one of the malt Whisky leaders.\u003cbr\u003e\r\n\u003cbr\u003e\r\n \u003cbr\u003e\r\nYou may know \u003cem\u003e\u003cstrong\u003eCardhu\u003c\/strong\u003e\u003c\/em\u003e as the signature base-malt of \u003cem\u003e\u003cstrong\u003eJohnny Walker\u003c\/strong\u003e, \u003c\/em\u003ebut it was a single malt long before the blenders got the hands on it. Happily, Diageo has restored it to its former glory. For their latest expression of the \u003cem\u003e\u003cstrong\u003eCardhu \u003c\/strong\u003e\u003c\/em\u003erange, they have married vintages of the \u003cem\u003e\u003cstrong\u003emain-line single-malt \u003c\/strong\u003e\u003c\/em\u003eand then re-matured them … allowing the flavour profiles to integrate in the barrel. \u003cbr\u003e\r\n \u003cbr\u003e\r\nWhat emerges is an \u003cem\u003e\u003cstrong\u003earomatic, wood-forward\u003c\/strong\u003e\u003c\/em\u003e dram with \u003cem\u003e\u003cstrong\u003eplenty of spice\u003c\/strong\u003e\u003c\/em\u003e and character.
